La Tour Restaurant in Vail, Colorado is seeking a Beverage Director/Sommelier/Dining Room Manager.

Awarded the “Best of Award by Wine Spectator for eight years running.The right person should have minimum 3-5 years managing the beverage program of a wine driven restaurant. Preferably be a certified or advanced level sommelier diploma or experience there of.
This person needs to understand all financials of pricing and cost of goods associated with a beverage program in a fine dining restaurant.Duties and responsibilities include:
*Write & maintain wine list, cocktail menu and beer menu.
*Maintain order and cleanliness of wine celler.
*Order all wine, liquor, beer and mixers. Keep contacts and phone list up to date.
*Program & maintain all beverages in Aloha POS system.
*Control cost of goods sold in beverage program and meet targeted goals.
*Take mandatory semi-monthly inventories.
*Train staff in wine knowledge and service. Hold weekly beverage training classes.
*Manage restaurant in slower seasonal periods & summer season.
*Be on floor sommelier during winter season.
*Close and open restaurant as needed.
*Help increase business with special events(wine, beer, cocktail events) creative wine, cocktail and beer ideas.
*Maintain and clean refrigeration and heat for storage of all beverages.
*Learn and maintain reservation systems.
*Build and maintain relationships with guest. Create a community of internal and external guest.
*Identify areas of loss and put forth strategy to stop it.
*Identify areas to increase profit.
*Work the floor to increase beverage sales.
*Imput invoices, cost, selling price and inventories. Ensure inventory sheets are accurate.
*Participate in local, state and national beverage and food events to help promote La Tour.
*Leverage professional relationships to increase business.
*Track product losses, ie. corked bottles, and follow up with credits.
*Handle guest complaints with utmost hospitality.
Salary commensurate with Experience. Bonus program, ski pass, Insurance program
